It’s every where right now. People can’t seem to quit talking about pumpkins! Facebook pictures are being posted with trips to the pumpkin farm. Pumpkin recipes are being shared. I even got a pumpkin in my CSA share. The weather in my part of the world has been fantastic so who wouldn’t be excited about fall?
It definitely got me inspired. I was cruising the grocery store and found my self putting a can of pumpkin in my shopping cart with no plan how to use it. There was definitely no pumpkin pie baking in my near future. Ain’t nobody got no time for that. But this no-bake cookie recipe hits the spot, has lots of good nutrition, and very easy to make. There are many versions of this floating around the internet so it’s easy to experiment and come up with your own version. Have fun with it!
Pumpkin No-Bake Cookie
3/4 cup Old Fashioned Oats
1/4 cup seeds (I used a combo of sunflower and pepitas)
1/4 cup cashew pieces
1/2 cup pumpkin
1/4 cup raisins
1-2 tablespoons honey
1/4 teaspoon vanilla extract
1/2 teaspoon pumpkin spice
1/4 teaspoon cinnamon
Mix all ingredients in a bowl. Form into small little balls. Refrigerate until ready to serve. Makes approximately 12 balls.
