I’m a simple girl. I like simple things bit I also like interesting things. So when I was out of town visiting a friend and tried this yummy honey cranberry rice from Bam Healthy Cuisine, I had to figure out how to recreate it. I couldn’t drive 2 hours every time I wanted it! It gave plain old rice a sweet twist. I’m not sure this follows my attempt at cutting out added sugar but I also try to consume a bit of honey every day for the local pollen factor (buy your honey local people!). This dish is most definitely not devoid of nutrients and way better than fast food, coke, and cake.
At first I wasn’t sure when to add the honey to the rice but after a couple of attempts I think I got it figured out. It’s so freaking simple I had to share.
Honey Cranberry Rice
1 cup Brown Rice
1/2ish cup Dried Cranberries
1-2 tablespoons Local Honey
Cook rice as directed on the stovetop. When the water comes to a boil and you add the rice, return the water to a boil and add the honey. Cover the rice and turn the heat down to a simmer. Fluff the rice and mix in the dried cranberries.
The restaurant version also adds pepitas and flax. You can easily get creative with this base recipe. I just love that it’s easy and reheating it over several days has been a great time saver. Make it on Sunday and you have a great side dish for several meals during the week.
